Ingredients:
- 2 kg of ripe and firm tomatoes
- 1 large onion, finely chopped
- 2 cloves of garlic, finely chopped
- 2 sprigs of fresh basil
- 1 teaspoon of sugar
- Salt and black pepper to taste
- Extra virgin olive oil q.s.
Preparation:
In a large saucepan heat the oil and add the onion and garlic, cook over medium heat until soft.
Cut the tomatoes into small pieces and add them to the pan, add the sugar and cook for about 15 minutes.
Add the chopped fresh basil and continue to cook for another 10 minutes until the sauce thickens.
Blend the sauce to a smooth consistency or leave it coarsely pureed for a rustic texture.
