Guardiolo Tomato Sauce is sold in a 500 g glass jar.

Guardiolo sauce is a tomato-based sauce typical of Samnite cuisine, originally from the Benevento area.

Guardiolo sauce is distinguished by its thick and full-bodied consistency and its intense and spicy flavour.

The preparation of this sauce varies according to the recipe, but usually involves the use of ripe tomatoes, onion, garlic, chilli pepper, and spices such as oregano, basil and parsley. Guardiolo sauce is mainly used to flavor pasta, such as pasta with sardines or pasta with turnip tops.

It can also be used as a base for the preparation of other dishes such as eggplant parmigiana or pizza.

Guardiolo sauce is a tomato-based sauce typical of Calabrian cuisine, originally from the Cosentino area. Here is a possible recipe for preparing Guardiolo sauce:

Ingredients:

  • 2 kg of ripe and firm tomatoes
  • 1 large onion, finely chopped
  • 2 cloves of garlic, finely chopped
  • 2 hot peppers, finely chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon dry basil
  • 2 sprigs of fresh parsley
  • Salt and black pepper to taste
  • Extra virgin olive oil q.s.

Preparation:

In a large saucepan heat the oil and add the onion, garlic and chiles, cook over medium heat until soft.

Cut the tomatoes into small pieces and add them to the pot, add the oregano and dried basil and cook for about 20 minutes.

Add the chopped fresh parsley and continue to cook for another 10 minutes until the sauce thickens.

Blend the sauce until you get a smooth consistency.

Guardiolo sauce can be kept in the refrigerator for 3-4 days or frozen for a maximum of 3 months.

It can be used to season pasta, to accompany grilled meats or to prepare pizzas.

We recommend using fresh, in-season tomatoes to get the best result.
