The green tomatoes are harvested to then be transformed within 24 hours so that they retain all the freshness of their flavor, they are then harvested manually and processed to give rise to this alternative and innovative preserves in oil.

The pleasant and crunchy taste then flavored with oregano, capers and chilli give a particular sour note of the typical Italian cold marinade.

How to make green tomatoes in extra virgin olive oil

Cut all the tomatoes into slices and in a colander forming layers, to which we will add the salt that will be used to drain the vegetation water of the tomatoes themselves.

Once finished with the last layer of tomatoes and salt, cover them by placing a plate on top and a weight in order to crush them well, then leave the tomatoes to rest for 24 hours.

After 24 hours we will find all the water from the tomatoes under the colander, at this point we crush them a little with our hands and pour them into a pan or in any case a low and large container.

We try to cover them all with white wine and vinegar, adjusting to our taste, leaving them to marinate for 12 hours.

Once the resting time is over, we drain and season them to our liking with various aromas first in the container where they were already and then we arrange them in previously boiled and dried jars.

How to use the product

As an appetizer with cold cuts and cheeses and as an accompaniment to grilled meats or fish.

Green tomatoes are also excellent on a bruschetta or on a crouton, to fill sandwiches and accompany salads.
